Roasted Sweet Potato Salad


This Roasted Sweet Potato Salad is simply irresistible! Loaded with fantastic textures and flavors, this recipe is filling enough to serve as a main.

Sweet potatoes are rich in fiber, vitamins, and minerals. They’re also loaded with antioxidants that protect your body from free radical damage and chronic disease. The addition of Greek yogurt helps improve gut health thanks to the good bacteria present in it. These ingredients and a few more healthy additions only add to the nutrition of this wholesome salad.

2 tbsp Greek yogurt

1 tbsp organic lemon juice

1 organic sweet potato, cubed

1/2 organic red onion, sliced

Crumbled cheese (we used vegan feta cheese)


Marinate the organic sweet potato in some olive oil and salt. Place on the oven for around 20-25 minutes until it is cooked through.

For the dressing:

Place the ingredients together together in a small bowl and whisk until the ingredients are properly mixed. You may also blend this on low speed. Store at room temperature.

To serve:

Spread the Greek yogurt onto a plate evenly. Place the roasted sweet potato on top.

Add in both the onions and then pour the dressing over your plate.

Finally sprinkle a generous amount of cheese on top along with a squeeze of lemon.
