These Spiced Beetroot Patties are healthy, incredibly delicious and perfect for a light weekend lunch. Try it for yourself, we dare you not to like these!
Ingredients:
1/2 cup beetroot, mashes (about 2 big beets – boiled or roasted)
1 cut sweet potato (boiled or roasted)
3 tbsp almond flour
1/2 tsp cumin powder
1/4 tsp chaat masala (if you don’t have this, add some coriander powder, rock salt, black pepper, dried mango powder and a pinch of hing)
1 to 2 spring onions, finely chopped
1/4 to 1/2 tsp green chill paste
1/4 to 1/2 tsp ginger paste
1/4 to 1/2 tsp salt (to taste)
Optional:
Breadcrumbs/oat flour/rice flour to coat if not grain-free or gluten-free. You can also add an egg into the mixture if you are not vegan.
Instructions:
If you have time, roast the beetroot and sweet potato in the oven for around 50 to 60 minutes on 180oC. Make sure a fork easily goes through the vegetables to check if it is ready. Allow to cool then peel and grate them.
Add the almond flour, spring onion and spices into the vegetable mixture and mould into 5 to 6 patties. If you are not vegan, you can add an egg into the mixture to help it form.
Place in the fridge for 30 minutes. In a shallow frying pan put some olive oil or avocado oil and fry until golden brown. Alternatively, you can also put them in the air fryer.
