Chia Nut Butter Pudding

If you love a good pudding but are on a diet, this Chia Nut Butter Pudding will be your new go-to snack. This recipe is gluten-free, dairy-free, grain-free, sugar-free, paleo friendly and incredibly customizable! It is perfect for almost any dietary preference or restriction and doesn’t skimp on flavour! While this is a great starter recipe, feel free to get creative with the ingredients.

Creamy, high-fibre and packed with nutrition, this chia nut butter pudding is just what you need to kickstart the day. We recommend a small bowl on Monday mornings to drive away those blues or as a mid-day snack any day of the week to get rid of the post-lunch slump.

Ingredients:

1/4 cup chia seeds

1 1/4 cup unsweetened almond milk or vegan milk of choice

2 tbsp nut or seed butter of choice

1 tsp vanilla essence

1 tsp cinnamon powder

Sweetener, 1 date, half a banana or 1 tsp maple syrup

1 tsp ground flaxseed or dessicated coconut (optional)

Chopped banana or blueberries for topping

Instructions:

In a blender mix the almond milk, vanilla, but butter, cinnamon powder and sweetener of choice.

In a bowl, whisk the chia seeds (and flaxseed or coconut if adding) into the mixture. Make sure you mix extremely well. Refrigerate overnight.

Serve with chopped banana, blueberries, chopped nuts and drizzle more nut butter,.
