Gluten-free Nutty Granola

Finally a chance to munch on granola without the bad! This Gluten-free Nutty Granola recipe is high in vitamins, minerals and antioxidants, promising the immunity boost we all need.

Each bite of this super-yum granola is power packed with B vitamins that help increase energy, elevate mood and fight off exhaustion. Oats are a rich source of proteins, minerals and soluble fiber. They also contain saponins and beta-glucan, making it a nutritious choice for new moms. And remember, these tiny movements bring about BIG results.

Ingredients:

1.5 cups rolled oats

1 cup chopped almonds

1 cup roughly chopped walnuts

2 tbsp almond flour

1/2 tsp cinnamon powder

1/2 tsp sea or Himalayan salt

1/2 cup desiccated coconut or coconut flakes

1/2 cup pumpkin seeds

1/2 cup sunflower seeds

1/2 cup sesame seeds

1/2 cup additional nut of choice (optional)

Instructions:

Mix all the ingredients together.

On a stove, heat up 100ml of coconut oil, 75ml of maple, honey or date syrup and add a dash of vanilla essence.

Remove from heat and mix into the dry granola mixture.

Mix it well and make sure the entire mixture is coated before transferring on to a baking tray.

Add the mixture on to the tray with a baking sheet and pat it so it fill the entire tray.

Drizzle some honey and sea salt over the granola.

Bake for 30 minutes at 160C.

Add dried cranberries and chopped dates or raisins, and bake for another 10 minutes.

Cool, and break into chunks. Store it in an airtight container.
