Paleo Brownies

Everyone has their special guilt pleasure, for us it’s a decadent, gooey brownie. Just thinking of it could make you put on a few pounds! But that doesn’t mean can’t have a piece now and then, especially when we’ve got the perfect recipe that gives it a healthy spin. Crafted by our wellness partner Shaana Levy-Bahl, this recipe is the ultimate guilt-free dessert the whole family can enjoy!

Go ahead give yourself some brownie points for getting through the week!

Ingredients:

1 cup blanched fine almond flour

½ tsp sea salt

½ tsp baking soda

120 gms 70 to 100% dark chocolate, chopped and melted

5 to 6 dates, pitted or 1/3 cup maple syrup

3 large eggs

½ cup coconut oil or butter, melted

½ tsp vanilla essence

Chopped walnuts to sprinkle on top (optional)

Instructions:

In a blender, add all the ingredients and pulse. Blend until the mixture is smooth.

Pour the mixture into square brownie pan. Make sure the batter is spread evenly.

Bake at 180°C for about 18 to 22 minutes. Poke a toothpick into the batter, if it comes of clean your brownies are ready. Set aside to cool.

Serve with melted 70% cocoa chocolate as a glaze.

Enjoy warm or cold with a side of vegan chocolate ice cream for a double chocolate experience or with a refreshing mango coconut ice cream for the best of both worlds.
