If you’re lactose intolerant like 60% of India’s population and you’ve still not made the switch to almond milk, this is the perfect way to start. Cow’s milk or any non plant-based milk contains certain sugars that easily digestible, but this doesn’t mean you need to give up on the calcium and other nutrients that come with it. Nut-based milks are equally nutritious and truth be told, nothing beats a tall glass of freshly made almond milk. These tiny movements from regular milk to a healthier substitute adds up to give you big results.
While we’re all for the convenience of store-bought almond milk, making it from scratch is its own reward. It gives you the luxury to choose your ingredients, so that it’s just right. You can make it as sweet as you like or as thick, you can even go as far as adding some spice. And it’s not as tough as you think – 2 main ingredients and around 10 minutes is all it takes. That’s not even the best part about homemade almond milk. Yes, it’s healthy, vegan and delicious, but more importantly it gives us the perfect excuse to make almond cookies!
How To Make Almond Milk:
Ingredients:
1 cup almonds
3 cups water
Optional:
1 date
1/2 tsp cinnamon powder
1/2 tsp vanilla bean or vanilla extract
Instructions:
Soak the almond overnight in water. If you wish to use vanilla bean and a date, soak them with the almonds in several cups of water.
Discard the water and rinse the almonds.
Add the soaked almonds, date, vanilla bean, cinnamon and 3 cups of water in a blender.
Blend for 90 to 120 seconds on high. Strain with a nut bag or muslin cloth. Set aside the almond pulp for the cookies.
How To Make Almond Cookies:
Ingredients:
1 cup almond pulp (wet)
1 cup coconut, shredded
1/4 cup maple or date syrup
1 chia egg (1 tbsp chia mixed with 2.5 tbsp water)
1/2 cup dark chocolate chips or raisins or cranberries
Instructions:
Preheat the oven to 180C.
Mix all the ingredients together.
Cover the baking tray with parchment paper and scoop the cookie dough on the sheet.
Flatten with a fork and place it in the oven for 20 minutes or until golden brown.
Enjoy cold or warm!
