While spinach isn’t everybody’s favourite vegetable, it does pack in a lot of vitamins and minerals that are known to aid weight loss, boost immunity, keep your heart health in check and of give you gorgeous glowing skin. No wonder it’s a superfood!
Ingredients:
1/2 cup almond flour
1/2 cup coconut flour
1/4 cup mashed banana or apple puree
1 cup spinach leaves
2 tsp baking soda
2 eggs
A pinch of salt
1 tsp vanilla essence
Chocolate chips or blueberries, optional
Instructions:
Blend the eggs, banana or apple sauce and fresh spinach in a blender until smooth.
Add in almond flour, coconut, baking soda, vanilla essence and salt. Blend for 1 minute.
Heat a little butter or coconut oil in a non-stick skillet over medium heat.
Once hot add 1/4 cup batter and drop in the add-ons like chocolate chips or blueberries if you’re using any on to the batter.
Let it cook until golden brown, about 3 minutes, then flip and continue to cook for 2 minutes until pancake is fully cooked. Continue the same method for the rest of the batter.
Serve pancakes with desired toppings and serve immediately.
