If you thought pizza can’t be healthy, think again! Kripa Jalan, Non-Diet Nutritionist and founder of Burgers To Beasts shows us that pizza can be healthy too.
This recipe is a great way to get in your pizza cravings without the guilt of calories. It is also the perfect base recipe to get creative and build on. Add your favourite veggies or protein and make a meal of it. We suggest rocket lettuce, spinach, mushrooms and shredded chicken. Ingredients:
1 tbsp parmesan cheese
2 large eggs
1 tbsp psyllium husk
1 tbsp olive oil or butter
½ tsp oregano or dried Italian seasonings
Salt, to taste
2 tbsp tomato puree or sauce without added sugars
30 to 45 gms cheese, grated
Instructions:
In a bowl, add the parmesan cheese, psyllium husk, salt and Italian seasoning and mix well.
Crack in the eggs. Mix well with a hand blender.
In a pan or skillet, heat the cooking fat. Pour in the egg mixture.
Once the edges have started to brown (about 2 minutes), flip over the crust and cook for 30 seconds.
Spread the sauce evenly across the crust. Add the grated cheese all over. Let it sit in the pan for a minute or until the cheese melts. Serve hot.
