Today, our wellness partner Shaana Levy-Bahl shares a recipe that has worked wonders for her gut health. She says, “At any given point, my freezer will always have small containers of bone broth in it. It’s wonderfully healing for the gut and can be used in a myriad of recipes or had as is! It truly saved me during my fourth trimester and I am currently giving it to my 7-month-old with pureed vegetables. It comforts me to know the whole family benefits from its readily available nutrients.”
According to author and cardiologist, Alejandro Junger, “Bone broth can be a wonderful digestive tonic.” It helps nourish and support the repair of the digestive tract.
Ingredients:
1 whole pasture-raised chicken or chicken bones
2 medium onions, roughly chopped
1 cup chopped carrots
1 cup chopped celery (use the leaves as well)
2 bay leaves
2 garlic cloves, unpeeled
1 inch ginger
1 tbsp peppercorns
1 inch fresh turmeric (optional)
Handful of parsley, coriander or thyme or all!
A splash of apple cider vinegar
Instructions:
In a deep pot, add all the ingredients and top with water.
Bring the mixture to just under a boil, and simmer for 4 to 6 hours.
After two hours, remove the meat and set it aside for soups or other recipes, leaving just the bones to continue cooking.
When the stock is ready, strain and set aside to cool.
This stock can go a long way. Keep whatever you need to use in the fridge and freeze the rest of it in small containers. You can use this stock for up to three months.
