A great way of eating mindfully is by resorting to a plant-based diet. It focuses more on inclusivity rather than exclusivity, making it easier to adapt to and beneficial for your health.

The two main ingredients in this recipe are zucchini and carrots and are known for their wealth of nutrition. Prized for its low-calorie count and high fibre content, zucchini plays an important role in digestion. Carrots on the other hand, help keep blood sugar levels under control and are rich in calcium and vitamin K, both of which are important for bone health.
Ingredients:
1 large zucchini, shredded
2 carrots, shredded
Handful of spinach, chopped
1 to 2 eggs or ¼ cup gluten-free flour
1/2 cup scallions, sliced
Handful of fresh herbs
1 tbsp mustard
A splash of avocado oil
Fine sea salt, black pepper, herb de Provence and paprika, to taste
Instructions:
In a bowl, finely great the zucchini and carrots. Make sure you squeeze out all the water from the vegetables.
Add the chopped herbs, scallions and spinach to the rest of the vegetables. Mix well.
Add the spices, mustard and the eggs or gluten-free flour of your choice. Mix well.
Form into medium sized balls and set aside.
Heat a pan and add avocado oil. Once the oil is hot enough add a few vegetable balls to the pan.
Cook for about 20 to 30 minutes until both sides are golden brown.
This is also a fun way to get your kids to eat their veggies. Add sweet potato to the mixture and turn the patties into veg burgers.
